A gluten free product, Badia Annatto (also called Achiote) is a spice used for color and flavor in a variety of dishes such as rice, vegetables, meat stews and fish. While it's often used to give a dish a yellow color, it also has a mild peppery flavor and is used quite often in Mexican and Caribbean cuisine. Annatto is found in the pulp that covers the seeds of a tree native to the Americas, especially Mexico and the Caribbean.
